Gluten Free Almond Butter Blondies

These delicious almond butter blondies are oozing with goodness! This is my go-to recipe for an afternoon treat to have with a cup of tea.

They’re free from gluten and dairy.

Ingredients

  • 1 cup almond meal

  • 1/2 cup coconut sugar

  • 2 Tbsp coconut flour

  • 1 tsp baking powder

  • 1/2 cup dark chocolate chips

  • 3 organic eggs

  • 1 tsp vanilla extract

  • 1/4 cup extra virgin olive oil

  • 1 tbsp water

    For almond swirl:

  • 1/4 cup almond butter

  • 1 tsp coconut sugar

    Method:

    1. Preheat oven to 180 degrees.

    2. Line a square baking tray.

    3. Mix combine almond meal, coconut sugar, coconut flour and baking powder.

    4. Add in eggs, vanilla, olive oil and water. 5. Beat in a mix master, until mixture starts to thicken. 6. Stir in chocolate chips and pour mixture into a baking tray.

    7. Combine almond butter and 1 tsp of coconut sugar, drizzle over batter and use a butter knife to create swirls.

    8. Bake for 20-25 minutes or until cooked through. Store in fridge until firm and enjoy!
