Mexican Falafel Canapés

These Mexican & falafel canapés are perfect for spring entertaining or as a quick, healthy snack! They’re topped with guac and crunchy corn chips.

Here’s what you need to make them:

• 7 Bite Me Fine Foods organic vegetarian Falafels
• Handful of organic corn chips
• 1/2 avocado
• 1/2 tomato, sliced
• 1/4 red onion, sliced
• 1/4 lime
• Salt and pepper

Method:
1. To make quacamole, smash avocado in a small bowl. Stir in tomato, onion and a squeeze of lime juice. Season with salt and pepper.
2. Heat falafels in a sandwich press until crisp on both sides.
3. Add quacamole mixture to falafels to make canapés.
4. Break corn chips into smaller chunks and sprinkle over canapés. Add extra tomato and onion on top.
5. Serve & enjoy!
