Easy Pumpkin & Potato Soup

This easy pumpkin & potato soup is so quick to make with ingredients you might already have in the fridge.

Here’s what you’ll need:

1 butternut pumpkin (skin removed)
3 cups chicken or vegetable stock
1 cup water
1 brown onion
2 potatoes
1/2 small sweet potato
1 apple
1 clove garlic
Salt + pepper

Method:

1. Chop veggies.
2. Sauté onion and garlic in a saucepan.
3. Add the remaining veggies, stock and water.
4. Boil until soft.
5. Blend and season with salt + pepper.
6. Serve with a slice of toast!
