Healthy Peanut Butter Cookies

These peanut butter cookies can be ready to eat 20 minutes! They are really filling and delicious. The perfect combination of peanut butter and dark chocolate!

All you need is:

  • 1 1/2 cup blanched almond meal

  • 1/2 cup organic peanut butter

  • 1/4 cup 100% pure maple syrup

  • 1/2 tsp vanilla

  • 1/2 cup dark chocolate chips, melted

  • 1 tsp MCT oil (or liquid coconut oil)

  • Pinch of Himalayan salt

Method:

  1. Preheat oven to 160 degrees.

  2. In a medium-size bowl, combine almond meal, peanut butter, maple syrup, and vanilla.

  3. Spoon into 10 balls and flatten with a fork.

  4. Bake for 10-12 minutes.

  5. Once golden, remove from the oven and allow to cook.

  6. Melt dark chocolate, and dip in the side of each cookie. Place on a tray and sprinkle a pinch of salt across cookies. Place in fridge until the chocolate has set, and enjoy!
