Healthy Blueberry Loaf

This healthy blueberry loaf is so easy to make using minimal cooking utensils, with the majority of ingredients already in your pantry!

I’ve been baking a lot more during the lockdowns, and decided to whip up one of my favourites (it never lasts long in my house)! Enjoy it as a snack with tea or as an on-the-go breakfast option.


Ingredients

1 cup organic blueberries

1 cup wholemeal organic spelt flour

1 cup almond meal

1 tsp baking powder

Pinch of Himalayan salt

2 organic eggs

1/3 cup organic honey

1/2 cup milk (any type)

3 teaspoons extra virgin olive oil

1 tsp vanilla

Method

  1. Preheat oven to 180 degrees.

  2. Line a small loaf pain with baking paper.

  3. In a medium size bowl, mix spelt flour, almond meal, baking power and pinch of salt until combined.

  4. In a seperate small bowl, whisk together eggs, honey, milk, olive oil and vanilla.

  5. Add the wet ingredients to the flour mixture until well combined.

  6. Gently stir in blueberries (be careful not to over stir).

  7. Pour mixture in pan and bake for 25-30 minutes or until golden and cooked through.
