Chunky Choc & Pecan Cookies
These chunky choc and pecan cookies are the perfect rainy-day baking recipe. They are a healthier alternative to standard cookies, containing a number of delicious nutrient-dense ingredients including almond meal, spelt flour, honey, nuts and oats!
Enjoy with a morning cuppa, they have just the right level of sweetness to hit the cravings spot.
Ingredients
1 1/4 cup organic almond meal
1/4 cup organic spelt flour
1/3 cup coconut (shaved)
1/3 cup pecans, chopped
1/2 cup dark chocolate chips (or sugar-free choc-chips)
2 tbsp oats
1 tbsp coconut flour
2 tbsp coconut sugar
1 tsp baking powder
1/4 cup honey
1/4 cup grass-fed butter, melted
1 egg
1 tsp vanilla
Method
Preheat oven to 180 degrees. Line baking tray.
In a medium-size bowl, combine all dry ingredients - almond meal, spelt flour, oats, shaved coconut, pecans, coconut flour, choc-chips and baking powder.
In a small bowl, whisk eggs, and stir in honey, vanilla and butter. Add to dry-ingredient mixture and stir.
Once combined, spoon mixture into 12 tablespoon sized balls. Place on baking tray and flatter.
Bake for 10-12 minutes or until golden.
