Hazelnut Chocolate Chip Cookies - Low Carb

These cookies are honestly to die for! (they’d have to be one of my best creations yet) I can guarantee they will be hard not to eat in one sitting and will hit the spot if you are craving nutella, minus the bloat and sugar.

They taste like ‘Nutella’, are perfectly light and fluffy and are also a healthier alternative to regular cookies.

Although I’m not one to ‘diet’ I am eating less carbohydrates (and avoiding refined carbohydrates and sugars all together) in the lead up to my wedding.

They’re great for work/uni snacks or for energy before a workout!

- For a paleo option, swap butter for coconut oil


Ingredients

  • 1 cup hazelnut meal

  • 3/4 cup almond meal

  • 1 tbsp coconut flour

  • 3 tbsp + 2 tsp monk fruit or granulated natural sweetener/stevia

  • 1 1/2 tsp baking powder

  • 1/2 cup 70-85% chocolate chips

  • 1 organic egg

  • 1/4 cup butter

  • 1 1/2 tsp vanilla extract

  • 2 tbsp almond milk


Method

  1. Preheat oven to 180 degrees.

  2. In a medium size bowl, combine almond meal, hazelnut meal, coconut flour, baking powder, sweetener and chocolate chips.

  3. In a seperate bowl, whisk egg, vanilla, melted butter and almond milk.

  4. Combine both wet and dry ingredients.

  5. Roll spoonfuls and place down on lined baking tray. Makes 12 cookies.

  6. Bake for 25-35 minutes or until golden.

  7. Enjoy! :)
